Who's Rika?
Hello everyone, welcome to Rika Plant Kitchen!
My name is Rika.
I am a vegan, holistic nutritionist and chef based in a beautiful city, Vancouver.
I love making food for my friends, my family and the people I love!
Cooking and baking have been my favorite thing to do in my entire life. I started helping my mother and grandmother with cooking as I was little, like 7 years old.
I love making people happy through my nutritious and delicious food! And as we all know, happiness is contagious ;) If we are happy, then, together, we can create a better environment and a better society! Also, no animals are harmed in my kitchen!
In 2017, I moved from my native Japan to Vancouver, Canada.
I was amazed by all the nature we can have so close to the city and realized how beautiful it was to soak myself in nature here! ( By the way, walking in the woods and soaking in river, creek and ocean are what I love to do as well as cooking! )
I somehow came across with holistic nutrition. It completely blew my mind!
I thought I have already known about nutrition, but I was wrong. There were so much more than I had expected to study!
Holistic nutrition is more about "You as a whole".
Whenever I cook, make recipes, coached my clients on their health journey, I always focus on "Whole Foods".
And this concept is also in my creations.
What is so special about Rika's Cheesecakes?
I use only natural and real foods to make cheesecakes!
- always FREE from refined sugar, artificial colouring, flavouring, emulsifiers and fillers
- maple syrup and dates are used as natural sweeteners, instead of refined sugar (white sugar)
- lemon juice is squeezed one by one, by hand to get its most flavour out of fresh lemons. No artificial flavour or pre-squeezed lemon juice bottles are used.
- real fruits are used to make raspberry and strawberry cheesecakes.
- cheesecakes are all gluten free, using mainly oats grown in Canada for its crust.
How did I get started this little vegan cheesecake shop?
I started making and experimenting with raw vegan cheesecakes for fun in 2018. Then, I showed a strawberry cheesecake to my lovely friends. Surprisingly, they loved it! However, it wasn't perfect in my opinion. ( Who said I am a perfectionist? ) So I changed the recipe to make it even better. After many attempts, my signature cheesecake: Strawberry Cheesecake was created!
